Weber Smoked Meatloaf

  • 2 lbs. 80/20 ground chuck
  • 1 packet Lipton’s beefy onion soup mix
  • 1/3 cup bbq sauce
  • 3/4 cup  Quaker oats
  • 3/4 cup water (beef stock and red wine can be used also)
  • 2 eggs

 

Place everything in a large mixer and use the paddle to mix,you can mix by hand too but the meatloaf is firmer and easier to slice if you use the mixer.

Place in a loaf pan and put it in a Weber kettle grill with the coals on one side and use the “indirect method” for about 45 minutes, rotate a couple of times while it is cooking so it gets cooked even. I place a few mesquite chips on the grate over the coals for smoking the loaf.
